The everything spread for summer corn
I have fond memories of fresh summer corn with this garlicky, parmesan spread. It’s more than addicting. As a teenager I would slather it on just about everything. Just make sure the whole household is eating it as it has generous amounts of garlic.
Ingredients:
- 6-8 Cloves of garlic mashed
- 2-3 Egg yolks at room temperature
- 1 Teaspoon dijon mustard
- Juice of 1 lemon
- 1/2 Cup of oil (peanut, grapeseed or safflower)
- 1/2 Cup grated parmesan
- Dash of salt
Preparation:

In a blender or food processor add mashed garlic, yolks, mustard, lemon juice and salt and mix well.

While blender is running drizzle oil until the consistency of mayo or aioli.

Add parmesan cheese and blend until just mixed.

Chill until ready for use, spread on fresh cooked corn preferably made on the grill.
