Even if you are quarantining and home during the day to cook, we all appreciate an easy weeknight pasta recipe. Melissa and I agreed to start a monthly column to share our favorites with you. Hers is our January, 2021 recipe.

Weeknight pasta recipes are awesome because they tend to be easy and are delicious and comforting – especially in the winter. It is super cold in Chicago right now, with a few inches of snow and 30 degree weather. I love throwing together what I ca that don’t require a ton of effort and that I can make with easy ingredients from my house.

My friend Michelle told me about Rachael Ray’s Peasant Pasta last fall. I love Rachael Ray. This is a super easy recipe that can be made with a few things from the cupboard and freezer. I find that using high quality Italian Sausage, maybe from your local meat market (I use my local butchers at Wheaton Meats and Rustic Road Farm), but Johnsonville Italian Sausages will do just fine. I also use only high quality San Marzano tomatoes really makes the flavor pop. Frozen peas are always a great thing to have in the freezer for pastas like this, but also thawed and added to tuna salad (thanks for the tip, Matthew McConaughey) or a great green vegetable salad.
