A classic southern snack and appetizer that’s also perfect for game day. I grew up in New York but there are two southern snacks or appetizers I love. The first is cornmeal hush puppies with honey butter and the second is pimento cheese.
The everything spread for summer corn. I have fond memories of fresh summer corn with this garlicky, parmesan spread. It’s more than addicting. As a teenager I would slather it on just about everything. Just make sure the whole household is eating it as it has generous amounts of garlic.
Every summer, for as long as I can remember, I have had at least one lobster roll on July 4th. While this year was different due to the Pandemic, I still went to the beach and craved my lobster roll before watching fireworks on TV.
I have had many collections over the last 10 years. But the only one I have still have is my collection of cocktail stirrers or ‘swizzle sticks’.
My late friend Kim used to make her famous shrimp for parties and porch gatherings at her home near the beach. There is not a summer I can remember that she didn’t serve these tasty shrimp. A few years ago, at my bridal shower she finally shared the recipe. This weekend I made them in her honor as she was born on Father’s Day.
Today, I am sharing my own version of a rhubarb crisp. The custard layer is essential to this dessert, perfectly combining the tart, creamy, sweet, crunchy and cinnamon flavors in every perfect bite.
