Pear Tart Tatin

Pear Tart Tatin is an easy one pan dessert that goes from oven to table in just over an hour.


On Sunday, I often find myself looking to make something new. It’s therapeutic and I have extra time. Today was no different. I decided I had fresh pears from my CSA, Misfits, and puff pastry in my freezer. And so today’s dessert was Jamie Oliver’s Tart Tatin.

I love Jamie Oliver’s recipes. They are full of flavor and quick and easy. Always with impressive results. Sweet pears, fragrant warming spices and crisp pastry make this Pear Tart Tatin dessert a delicious holiday dessert without a lot of fuss this Thanksgiving.

Here are my tips:

  • The caramel comes together quickly make sure your pears are prepped as you need to drop them in as soon as the caramel is gooey.
  • Don’t let the hot pan cool too much or you will not be able to flip out the tart tatin. The caramel needs to be warm and soft to invert the cake. (I had to reheat my cake in the oven for 7 mins again)
  • When the caramel hardens it’s like glass or rock candy, be mindful!
  • I love serving warm with a scoop of vanilla ice cream but whipped cream or plain is just as delicious.
